Uncomplicated and new tonight. Browned some rooster in a pan, and then completed in the oven. Roasted some garlic cloves in some oil, salt and pepper. Included the drippings from the oven roasting again to the browning pan, with the garlic, the juice of about fifty percent a lemon, and then some flour to thicken it down. That sauce was the hit of the dish! Ideal non-fried rooster I have ever had.
